A breakfast bowl is a good way to use extra veggies you have. This very low carb bowl gets a flavor boost from the spices, chicken sausage, mushrooms, and eggs. Drizzle a little lime juice over top for a zesty bite.
In a non-stick skillet, cook egg substitute over medium heat, stirring to scramble. Mix in the paprika and garlic powder.
Spray a medium skillet with cooking spray and heat over medium heat. Add the sausage links and cook until browned. Remove from the pan and add the onions and mushrooms. Cook until they are browned, about 5 minutes. Add the spinach and cook just until wilted. Remove from heat.
Divide the eggs between two bowls. Slice the sausage and place one link in each bowl. Add half of the rest to each bowl: the cottage cheese, the spinach and mushroom mix, the cherry tomatoes, and avocado. Sprinkle with chives. Drizzle with lime juice if desired.
