How to Make Radish Toasts with Goat Cheese & Chives
If you are a fan of avocado toast, try this radish toast! Diabetes-friendly and filling, this recipe is great to serve as breakfast or brunch. Try serving it with a salad like the Bountiful Harvest Vegetable Salad.

Step-By-Step Instructions:
Toast the bread.
Chop the chives and add to a small bowl along with the goat cheese. Stir to combine.
Carefully slice (using a mandolin if you have one) the radishes into ⅛ thick rounds.
Divide the cheese mixture between the four slices of bread. Top with sliced radishes and extra chopped chives, and salt and pepper, if needed.
I just used my usual multi-grain bread instead of rye. I’d never had goat cheese before, but loved it. I’m not much of a radish person, but love chives so I tried this. The small radishes without as much kick are perfect for this. Will definitely make this again and again.

One of the greatest thoughts I have ever had. I toast the bread and add low fat cream cheese on my toast because I wasn't able to get the store for goats cheese and I'm not sure I will like that cheese or not because I have never had it but I do plan to try it and see If I like it. Great way to use my radishes up before they go bad.
