How to Make Turkey Meatballs and Zucchini Noodles

This Italian-inspired version features delicious turkey meatballs and low-carb zucchini noodles for a healthy meal the whole family will enjoy.

Step-By-Step Instructions:

  1. Preheat the oven to 400 degrees F. Line two sheet pans with parchment paper. 

  2. In a mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, dried oregano, and ¼ teaspoon black pepper. Mix until well combined. 

  3. With wet hands, form the mixture into meatballs, approximately 1 inch in diameter, and place them on the sheet pan. Bake for 20 minutes, or until the internal temperature reaches 165 degrees F. 

  4. While the meatballs bake, toss the zucchini noodles with olive oil, and ¼ teaspoon black pepper and spread them on the second sheet pan. 

  5. Bake until tender, about 10-15 minutes. 

  6. Warm marinara sauce on the stove and toss the warm meatballs in the sauce. 

  7. Serve meatballs over the zucchini noodles and garnish with the olives and fresh parsley.
