Fruited Chicken Salad

You’ll get your fiber-rich fruit and protein together in this lunch salad-or serve it for a light dinner. Any apple variety will work; however, cookbook author Robyn Webb thinks sweet Gala tempers the slightly gamey flavor of the poultry.

Garlicky Tomato Salad

Plum and cherry tomatoes taste good year-round, so you can enjoy this salad anytime. In the summer, feel free to substitute yellow or heirloom tomatoes. Grilled shrimp is superb in this salad, so add it if you want to turn this into a main dish. Try this with sliced mint leaves in place of the basil or use half mint and half basil.

Ingrid Hoffmann's Chicken Tinga Poblana

This classic Mexican stew from Puebla, Mexico, is intensely rich in flavor and spices. It hits the spot every time. Serve either inside a tortilla or over a bowl of brown rice or quinoa and enjoy! For a different take on this dish, substitute lean pork loin for the chicken.

Lemon Popsicles

Enjoy these Lemon Popsicles on a hot summer day. Fresh and citrusy, they are a refreshing, diabetes-friendly treat to cool down with.

Grilled Pork and Cheese Quesadillas

A Mexican favorite can now be yours. When a quesadilla is grilled rather than prepared in an indoor oven, the result is smoky, rich-flavored quesadilla. If you can’t grill outside, this works great prepared on a stovetop grill pan.

Indian Salmon Stir Fry

In this stir fry, I give you alternative flavors instead of the traditional Asian ones. Asian flavors are bold and flavorful, but turn to this recipe for a change of pace.

Lasagna Cupcakes

Author Robyn Webb: "I’m not particularly fond of the massive cupcake trend that hit the nation not too long ago, but making lasagna into "cupcakes" is a movement I could get behind. When you want all the elements of lasagna in a low-calorie, very easy to serve way, my Lasagna Cupcakes fit the bill. These are great to bring to a party as they transport beautifully."

Salmon Quinoa Risotto

Author Robyn Webb says, "Quinoa is not the usual grain in risotto, but this protein-packed, tiny grain cooks quickly and results in a wonderfully fragrant risotto-like dish."

Tuscan Bean Soup

This Tuscan Bean Soup was one of the first soups Robyn Webb learned in a cooking class on a farm in Italy. She simplified it by using canned beans (the original recipe calls for using dried beans), which are perfectly fine. This is similar to minestrone soup, minus the pasta. Be sure to add the balsamic vinegar, it really draws out the flavor of the vegetables and makes the chickpeas taste even richer. Top each bowl with fresh grated Parmesan cheese, if desired.

Almond Butter Toast with Fresh Pear

Enjoy a sweet and savory start to your day. This Almond Butter Toast with Fresh Pears is a harmonious blend of nutty almonds and bright peaches, plush a dash of spicy cinnamon. Enjoy another take on this breakfast in the summer when flavorful, ripe peaches are in season.
