In a medium-sized saucepan, combine quinoa, almond milk, diced apples, maple syrup, ground cinnamon, ground nutmeg, and salt.
Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15–20 minutes or until the quinoa is cooked and the porridge has thickened.
Stir the porridge occasionally during cooking to prevent sticking.
Once cooked, remove from heat and let it sit, covered, for an additional 5 minutes.
Fluff the quinoa with a fork and adjust sweetness if necessary.
Serve the porridge in bowls, topped with chopped nuts if desired.
