These chicken skewers are tasty and versatile. Serve them with some veggies and brown rice for a fun and flavorful meal.
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
In a small bowl, whisk together kosher salt, black pepper, peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and turmeric. Add water gradually until you reach the desired sauce consistency.
Pour 1/3 of the peanut sauce on the chicken and stir well to coat the chicken in the marinade. Marinate for 20 minutes.
Preheat the grill or grill pan to medium-high heat.
Weave the chicken onto the skewers and grill for about 10 minutes, turning occasionally, until the chicken reaches an internal temperature of 165 degrees F and has a nice char.
Drizzle the remaining peanut sauce over the top or serve it on the side for dipping.
