This easy roasted zucchini is tender, lightly browned, and full of fresh flavor. With just a few ingredients and a quick trip to the oven, it makes a delicious side dish that pairs well with almost any meal.
Heat your oven to 425°F.
Wash the zucchini and cut it into halfmoons or small pieces.
Place the zucchini on a small baking sheet.
Drizzle with olive oil and sprinkle with salt, pepper, garlic powder and Italian seasoning.
Toss to coat the pieces evenly.
Spread the zucchini in a single layer.
Roast for 12–15 minutes, or until tender and lightly browned.
Serve warm.
