Step-By-Step Instructions:

  1. Heat your oven to 425°F. 

  2. Wash the zucchini and cut it into halfmoons or small pieces. 

  3. Place the zucchini on a small baking sheet. 

  4. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder and Italian seasoning. 

  5. Toss to coat the pieces evenly. 

  6. Spread the zucchini in a single layer. 

  7. Roast for 12–15 minutes, or until tender and lightly browned. 

  8. Serve warm.
