Sautéed Chicken Sausage and Peppers, a quick and flavorful dish that brings together the savory taste of chicken sausage with sweet and colorful bell peppers. This diabetes-friendly version is full of veggies, making it a healthy and satisfying meal.

Step-By-Step Instructions:

  1. Bring water to a boil in a medium saucepan. Add cubed potato and cook for 7 minutes. Drain.   

  2. In a large skillet, heat olive oil over medium-high heat.

  3. Add the sliced chicken sausage to the skillet and sauté until browned on all sides, approximately 5-7 minutes. 

  4. Remove the sausage from the skillet and set aside. Add the sliced onions and peppers to the skillet. Sauté until softened, about 10 minutes. 

  5. Season the mixture with minced garlic, dried oregano, dried basil, fresh thyme, kosher salt, and pepper. Stir well to combine.  

  6. Add the potatoes and sausage back to the skillet and sauté 2-3 minutes more. Serve warm.
