Sheet pan dinners are quick and easy meals without a lot of clean up. Elevate your chicken with delicious balsamic vinegar and a side of crispy brussels sprouts for the perfect and healthy weeknight dinner.
Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper.
In a small bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, dried thyme, kosher salt, and black pepper to create the marinade.
Place chicken breasts in a large bowl and pour the marinade over the chicken, ensuring it's well coated.
Arrange the chicken breasts on the sheet pan and Brussels sprouts on the other.
Add the Brussels sprouts to the same bowl and coat well with the remaining marinade. Arrange the Brussel sprouts around the chicken on the sheet pan.
Bake in the preheated oven until the chicken is cooked to an internal temperature of 165 degrees F, about 25–30 minutes.
Remove from the oven, let it rest for a few minutes, and then garnish with fresh parsley and lemon zest and juice, if using.
