Sheet pan dinners are quick and easy meals without a lot of clean up. This Herb Roasted Pork and Sweet Potatoes recipe is a classic, homecooked meal that you’ll want to add to your weekly rotation of dinner options.
Preheat the oven to 425 degrees F. Line a large baking sheet with parchment paper.
In a small bowl, mix together olive oil, minced garlic, dried rosemary, dried thyme, kosher salt, and black pepper.
Place pork tenderloin in the center of the prepared sheet pan. Brush with ½ of the herbed oil mixture.
Toss sweet potato chunks and red onion with the rest of the herbed oil. Scatter the vegetables around the pork on the sheet pan.
Roast until the pork reaches an internal temperature of 145 degrees F, approximately 35–40 minutes, and the sweet potatoes are tender.
Remove from the oven and let the pork rest for a few minutes before slicing.
Serve the herb-roasted pork slices alongside the roasted sweet potatoes. Sprinkle chopped fresh parsley for garnish if desired.
