Step-By-Step Instructions:

  1. In a small bowl, mix together the cumin, smoked paprika, minced garlic, onion powder, dried oregano, brown sugar, kosher salt, and black pepper to create the spice rub. 

  2. Pat the pork tenderloins dry with paper towels. 

  3. Rub the spice mixture evenly over the surface of each pork tenderloin, ensuring they are well coated. 

  4. Let the pork rest for 30 minutes. For a more intense flavor, you can cover and refrigerate the pork for up to 4 hours. 

  5. Preheat your oven to 400 degrees F. 

  6. Heat olive oil in an oven-safe skillet over medium-high heat. 

  7. Sear the pork tenderloins on all sides until deeply browned, about 5 minutes per side. 

  8. Transfer the skillet to the preheated oven and roast for approximately 10–15 minutes or until the internal temperature reaches 145 degrees F. 

  9. Remove the pork from the oven and let it rest for 5 minutes before slicing. Slice into medallions and serve.
