Gazpacho is a soup primarily made with non-starchy vegetables. It is served cold and can be a great summertime snack. Plus it’s an easy way to get more veggies into your day!
In a food processor finely chop the vegetables and garlic in batches. Place into a large glass bowl.
Add balsamic vinegar, vegetable juice, salt, and pepper. Chill for at least an hour.
