Apple Pear Crisp is a warm and comforting dessert that combines the natural sweetness of apples and pears with a crunchy and spiced oat topping. This recipe is vegan and diabetes-friendly!
Preheat your oven to 350 degrees F. Grease a 9 x 13 baking dish.
In a large bowl, combine the sliced apples, sliced pears, lemon juice, granulated sugar, cinnamon, nutmeg, and salt. Toss until the fruits are well coated, and the sugar and spices are evenly distributed.
In a separate bowl, mix together oats, flour, brown sugar substitute, and diced cold plant-based butter. Use your hands or a pastry cutter to combine until the mixture resembles coarse crumbs.
Spread the fruit mixture evenly in the prepared baking dish.
Sprinkle the oat and flour mixture over the top of the fruit, creating a crumbly topping.
Cover with foil and bake for 20 minutes. Remove the foil and bake until the top is golden brown, and the fruit is bubbly, about 20 minutes more.
Allow to cool for 10 minutes before serving.
