In a large pot, combine chicken broth, onion, carrots, celery, garlic, bay leaf, salt, and black pepper.
Bring the broth to a simmer over medium heat.
Add the chicken breasts to the pot, ensuring they are submerged in the broth.
Reduce the heat to low, cover the pot, and simmer for 15–20 minutes or until the chicken reaches an internal temperature of 165 degrees F.
Once cooked, remove the poached chicken breasts from the pot and let them rest for a few minutes.
Slice the chicken breasts or shred them using two forks.
