Step-By-Step Instructions:

  1. Preheat oven to 400 degrees.
  2. Coat a large loaf pan generously with cooking spray. In a small bowl whisk together ketchup and balsamic vinegar.
  3. In a medium bowl, combine all ingredients and 1/2 cup of ketchup balsamic mixture. Reserve 1/2 cup ketchup balsamic mixture. Mix well.
  4. Spread mixture evenly into loaf pan. Top with 1/2 cup ketchup balsamic mixture. Bake for 60 minutes or until no longer pink.

This was delicious. I used a regular egg but I really enjoyed it, even came out better than my regular beef meatloaf. This was my first time using a recipe from this site. I have high hopes now.

I really like this recipe. I have made it several times and it always turns out good.

Not recommended

I did not like this meatloaf at all! It tasted gummy and the other half of the ketchup and balsamic mixture I used to put on top of the meatloaf made the meatloaf taste like vinegar.
