How to Make Mediterranean Lentil Soup

Lentils are a very healthy carbohydrate source with lots of fiber. This soup freezes well if you want to save part of it for another day.

I love soup, and thought this was very good. I added a cup of frozen mixed vegetables, 2 tablespoons of tomato paste and Italian seasoning instead of just oregano.

This was the best soup for a rainy day. I did add a few things. When cooking the sausage, I added some Mrs. dash over it. At the end of recipe I added 1 and 1/2 cups of mix vegetables and let simmer for 45 min. My hubby loved it and wants me to make it again. Next time I will double the recipe

I’m trying to Dubrow Keto Fusion diet and have been having success, so I decided to make this soup for my 4 hour refuel for a carb fix at the end of my day. The one thing I did that made it different than expected was that I used Johnsonville Italian Hot Sausage, and I also ground it while I browned it. It came out delicious, it’s aroma reminded me of pizza a little bit past that it was definitely the jump outside the box routine I was looking for. At 18ish carbs per serving, there’s no better way to do it! Sinlessly satisfactorily.

This looks great however it looks like there is more ingredients in the picture than what is listed. What other ingredients were used?
