Step-By-Step Instructions:
Heat a grill pan or large skillet coated with cooking spray over medium-high heat. Cook the pork 4 minutes on each side or until slightly pink in center. Place on cutting board to cool.
Chop pork and place in a large bowl with 1/2 teaspoon salt and 1/2 teaspoon pepper, if desired, and remaining ingredients; toss gently until well blended.
