Tender and moist, this Slow Cooker Braised Beef with Carrots and Turnips will be a hit with whoever eats it. Try serving this for your next Sunday family dinner!
In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Brown the beef chunks on all sides. Transfer the browned beef to the slow cooker.
In the same skillet, add the remaining tablespoon of oil if needed. Sauté the onions and garlic until softened.
Deglaze the skillet with red wine (if using) or water, scraping up any browned bits. Add tomato paste and stir to combine.
Transfer the onion and tomato mixture to the slow cooker.
Add carrots, turnips, dried thyme, bay leaves, salt and pepper to the slow cooker.
Pour the low sodium tomato sauce and the beef broth over the ingredients in the slow cooker.
Cover and cook on low for 6–8 hours or until the beef is tender.
Before serving, discard bay leaves and adjust the seasoning if necessary.
