In a bowl, whisk together the besan, water, and spices until smooth.
Stir in the vegetables. Cover and set aside for 5-10 minutes. Mix well again.
Heat a nonstick skillet over medium heat and lightly coat with cooking spray.
Pour the batter into the skillet, gently spread the batter evenly, and round off the shape to create a thin, 6-inch pancake.
Cook for 2-3 minutes per side, until lightly browned and cooked through.
Serve warm with 1 Tbsp plain Greek yogurt on the side for dipping.
