Step-By-Step Instructions:
Juice the lemon into a small bowl with the shallot. Let sit for about 10 minutes.
Combine the chicken and broccoli in a medium bowl.
Add the pesto, mayo, salt, and pepper to the bowl with the shallot and lemon juice. Whisk to combine and pour into the bowl with the chicken and broccoli.
Serve the chicken salad over mixed greens and cherry tomatoes.
