Casseroles are a great option to feed a crowd without a lot of work. This Ham and Broccoli Breakfast Casserole can be made the night before and popped in the over for an easy start to breakfast.
Grease a 9x13 baking dish with cooking spray.
Spread diced ham and blanched broccoli evenly in the baking dish.
In a bowl, whisk together egg substitute, milk, Dijon mustard, garlic powder, and pepper.
Pour the egg mixture over the ham and broccoli in the baking dish.
Sprinkle shredded cheddar and grated Parmesan cheese over the top.
Cover the baking dish with plastic wrap and refrigerate overnight (if desired)
When ready to bake, preheat the oven to 350 degrees F.
Remove the casserole from the refrigerator and let it come to room temperature while the oven preheats.
Bake for 40–45 minutes or until the center is set and the top is golden brown.
Allow the casserole to cool for a few minutes before slicing.
