How to Make Mediterranean Zucchini
With its sunny seasonings of fresh lemon zest, basil, oregano, and red pepper flakes, this recipe pays homage to the humble zucchini and elevates it to a whole new level of deliciousness. Bake them alongside Creole-Sauced Halibut, or cook them on the grill alongside Spicy Beef and Onion Kebabs.

Step-By-Step Instructions:
Preheat the oven to 400°F.
Place the zucchini with the cut side
up on a baking sheet. Drizzle the oil
over each half.
In a small bowl, stir together the
lemon zest, basil, oregano, red pepper flakes, and salt. Sprinkle over the zucchini.
Bake for 20 minutes, or until the
zucchini is just tender. Remove from
the oven. Immediately sprinkle each with 1 tsp Parmesan. Let stand
for 5 minutes before serving.
Very tasty dish! I didn’t have dried oregano so I used ground oregano and Italian seasoning. I also doubled the fresh lemon zest and baked it for 27 to 28 minutes. The pinch of crushed red pepper flakes is a hidden taste surprise! I added watermelon slices to the plate and the taste pairing was perfect.
