Step-By-Step Instructions:

  1. Preheat oven to 375° F.
  2. Coat a 13 x 9-inch pan with cooking spray. Spread hash browns on bottom of pan.
  3. In a large nonstick skillet, melt margarine over medium-high heat. Add onion and sauté until clear. Add remaining ingredients and mix well. Cook about 5 minutes, stirring occasionally.
  4. Pour soup mixture over hash browns. Bake for 50-60 minutes.

Made as written and baked for 60 minutes. The casserole came out a little too wet, so next time I will bake for a bit longer. Very good flavor though.

First time making this recipe and it was awesome! The 2 lbs. of hash browns is a bit much for one person, so I cut the recipe in half and made a 9x9 square baking dish portion of it. I will definitely make it again this my family dinner and other special events though!
