How to Make Quinoa Dessert Pudding

This dessert has the same comfort and flavor of rice pudding, but it's made with quinoa which is a high-protein whole grain and diabetes superfood. Be sure to rinse the quinoa before cooking—this helps avoid any bitter taste.

Step-By-Step Instructions:

  1. Rinse quinoa under cold water for 2 minutes.
  2. Whisk together milk, fat-free half-and-half, brown sugar blend, vanilla, cinnamon, and nutmeg in a medium saucepan over medium heat. Bring to a simmer.
  3. Once the milk mixture is simmering, stir in quinoa and reduce heat to a low simmer. Partially cover the pan and cook 40 minutes, stirring every 10 minutes.
  4. When quinoa is done cooking, stir in toasted pumpkin seeds and serve.
