Preheat your oven to 200 degrees F and line two baking sheets with parchment paper. You can also lightly grease the parchment paper with cooking spray to prevent sticking.
Wash and core the apples, removing the seeds and stems. You can leave the peel on for added texture and nutrients. Using a mandoline slicer or a sharp knife, thinly slice the apples into rounds, aiming for slices of about 1/8-inch thickness. Make sure they are consistently thin for even baking.
In a small bowl, mix the ground cinnamon, ground cardamom, ground ginger, ground cloves, and ground nutmeg to create a chai spice blend.
Lay out the apple slices on the prepared baking sheets in a single layer, ensuring they do not overlap. Sprinkle the chai spice blend evenly over the apple slices. You can use your fingers or a shaker to distribute the spices evenly.
Place the baking sheets in the preheated oven and bake for about 2 hours. You'll want to check the apple chips occasionally to prevent overcooking. The chips are done when they become crisp but not burnt. They will become even crispier as they cool.
