How to Make Budget-Friendly Hearty Cabbage Soup

This veggie-loaded, high-fiber soup is more satisfying than traditional cabbage soup because of the addition of beans and turkey sausage. It also freezes well, so freeze half and use it during a busy week when you don’t have much time to cook.

Step-By-Step Instructions:

  1. Spray a large soup pot with cooking spray. Add celery, onion and carrots and sauté over medium-high heat for 3 minutes or onions until clear. Remove from pan and set aside.
  2. Add turkey sausage and cook until brown, about 6-7 minutes. Add celery, onions and carrots back to pan and mix.
  3. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 30 minutes.

I love this recipe--it's one of my favorite recipes to make it at home and my husband and I always look forward to "soup day."

I do make a few adjustments though:
2 cans of beans (we've used pinto, black, and great northern and all seem to work)
1/2 tsp thyme
1/2 tsp rosemary
1-2 bay leaves
3 carrots
3 celery sticks

It turns out perfect every time. Such a comforting meal!

This is not a review but kept for my benefit for changes I made. I made this a smaller batch with half the ingredients, except for the tomatoes as I did have a can of those on hand. I used pepper, oregano, and Dr Graeger's spice blend from his website

This soup was delicious! I really loved it. But I like cabbage a lot. I added more veggies and packed the soup and it was great.
