Quinoa has more protein than any other grain. It is gluten-free, contains 2 grams fiber per serving, and is a healthy alternative to any recipe that uses rice.
Heat the oil in a large skillet over medium heat. Add the onions and cook for 3 to 4 minutes. Add the garlic and cook for 30 seconds. Reduce the heat to low and add quinoa. Cook over a low heat for 1-2 minutes, stirring constantly to make sure the quinoa doesn’t burn.
Add the vegetable broth and the juice of 1 lime and bring it to a boil. Reduce the heat to low, cover and simmer for 15 minutes or until done. Remove from heat.
Stir in the juice of 1 lime and chopped cilantro.

The dish has a nice texture, taste is pleasing without a strong aroma. Looks appealing on a plate with roasted chicken breast, assorted non-starchy veggies, tomatoes and avocado.
All ingredients were included in the recipe with clear, concise instructions.
I will make this recipe again and adjust it to our particular taste - I will reduce the lime juice added at the end by half. We love cilantro and may add more next time. My family will also request that I add salt even thought the low-sodium chicken broth has salt.
