Cod is a hearty white fish that picks up the flavors from the other ingredients it is paired with. The avocado and corn salsa adds a zesty southwestern flavor and beautiful color to this dish.
Preheat grill or grill pan coated with cooking spray to medium-high heat.
Combine all salsa ingredients, except the avocado, in a medium bowl. Gently stir in the avocado and set aside.
Brush both sides of the fish fillets with oil and sprinkle evenly with the cumin, 1/4 teaspoon of the salt, and black pepper. Cook 4 minutes on each side or until opaque in center. Serve with salsa alongside.
