Step-By-Step Instructions:

  1. Preheat oven to 350 degrees. Line baking sheet with parchment paper.

  2. In a large bowl, whisk together margarine, vanilla, egg, and low- or no-calorie sweetener. Mix until well blended.

  3. Add oats, quinoa and baking mix to mixture and stir well. Fold in chocolate chips.

  4. Drop by Tbsp. onto baking sheet. Bake for 15 minutes.

  5. Cool on wire rack and store in airtight container when cool.

Tips for this recipe

I was so intrigued by this recipe that I decided to try it. After following it to the letter, I realized that the dough was too dry to form cookies. So, I added a little over 1/8 cup of unsweetened almond milk. And being from Louisiana, I added 1/2 cup of chopped pecans. Once I added the almond milk I was able to form the cookies into mounds and place them on the baking sheet. When they were done, I thoroughly enjoyed them because they are crunchy, and the chocolate chips add a special touch. Just don't forget the almond milk, and you may want to test for taste before adding all of the recommended sweetener in the recipe. This is the healthiest cookie I've ever eaten. Enjoy!
