Asparagus is one of the first green veggies to start popping up in early spring. Here is a simple recipe that lets those spears shine! They’re seasoned with pepper and lemon zest, then finished with fresh lemon juice and a dusting of parmesan
Preheat your oven to 425°F. Line a baking sheet with parchment paper. Snap the tough ends off of the asparagus and discard.
In a large bowl, toss the asparagus with the olive oil, pepper and lemon zest.
Place the asparagus on the prepared baking sheet in a single layer. Bake for 15 minutes or until tender. Remove from the oven, then sprinkle with cheese and lemon juice.
