It’s easy to make your own egg bites at home! That way, you can monitor exactly what goes into them. These low carb Spinach and Mozzarella Egg White Bites make for a quick grab-and-go breakfast you can meal prep ahead of time.
Preheat the oven to 350 degrees F.
In a skillet, heat olive oil over medium heat.
Add diced red onions and cook until softened.
Add chopped spinach to the skillet and cook until wilted.
In a bowl, whisk the egg whites and season with oregano, salt, and pepper.
Grease a muffin tin with cooking spray.
Distribute the sautéed spinach and onions evenly among the muffin tin cups.
Pour the whisked egg whites over the spinach and onions in each cup. Sprinkle diced tomatoes and mozzarella cheese on top.
Bake in the preheated oven for 15 minutes or until the egg whites are set.
Allow the egg white bites to cool for a few minutes before removing them from the muffin tin.
