1/3 cup ricotta cheese, 1/2 cup strawberries

Step-By-Step Instructions:

  1. In a small bowl, mix together the ricotta cheese, honey, lemon zest, and cinnamon.
  2. Divide the mixture among four individual dessert dishes. Top each dish with a portion of strawberries and sprinkle with some of the graham cracker crumbs.

Strawberry lemon cheesecake

I followed instructions but did question if it is just the zest of the lemon that is used. It doesn't taste like cheesecake but it is good. I added vanilla and used stevia in place of honey. I will make it again as it is very simple and takes care of a sweet craving.

Do you use the juice of the lemon or just the zest?

I really enjoyed this recipe It's got a good flavor and I think it will be versatile with different berries, or even in the fall, with a chopped apple and more cinnamon. The only thing I changed when I made it was to add a splash of vanilla extract to the cheese mixture.

This did not taste like cheese cake, but, it was pretty good, I will be making this again. Easy to make and pleasing to the eye.
