Step-By-Step Instructions:

  1. Whisk the eggs in a bowl and season with salt and pepper.

  2. Heat the oil in a small non-stick pan over medium heat.

  3. Pour the beaten eggs into the pan.  

  4. Sprinkle diced tomato and chopped basil on half the omelet.  

  5. Once the eggs are set, fold the omelet in half and cook until the tomato softens, about 30 seconds.
