Step-By-Step Instructions:
Preheat oven to 375˚F. Spray 6 muffin cups with cooking spray. In large bowl, stir together banana, quinoa, nonfat yogurt and almond butter until blended. Fold in blueberries.
Spoon batter into prepared muffin cups. Bake for 20 to 25 minutes or until golden brown and set in center. Let cool completely.
The flavor is good, but I've cooked them for an extra 20 mins trying to get them to set. This was after leaving them out of the oven for 20 mins after the first cook. They will not set. There's nothing to soak up the moisture. You'll need to add some oats or something....the flavor is good, though.

These are superfood! So moist, with protein and fruit, perfect for the baby. Doubled the recipe because I had 2 ripe bananas, but used 1.5 cups blueberries, just perfect!!!!!!
