Green Beans with Mushrooms and Onions

How to Make Green Beans with Mushrooms and Onions

Crisp, vibrant green beans and earthy mushrooms were meant for each other, as you’ll experience when you taste this lightly flavored side dish. Try it with Mustard-Herb Roasted Pork Tenderloin or Grilled Sirloin with Tapenade.

Step-By-Step Instructions:

  1. Fill a medium saucepan three-fourths full with water. Bring to a boil, covered, over high heat. Cook the green beans, uncovered, for 5 minutes, or until tender-crisp. Drain well in a colander.

  2. Meanwhile, in a medium nonstick skillet, heat the oil over medium-high heat, swirling to coat the bottom. Cook the mushrooms, onion, garlic, and salt for 5 minutes, or until the mushrooms are soft and lightly browned, stirring frequently.

  3. Stir in the lemon juice, pepper, and cooked green beans.

I used this recipe and replaced the green beans( which I don't care for) with baby limas! Needless to say there weren't any left. Delicious!!!!

I prepared this recipe using the french string beans (no string removal), the regular white mushroom, sweet onions and only 1 table spoon of lemon juice. Everybody liked and fast to prepare too.
