Step-By-Step Instructions:
Preheat the oven to 375 degrees F. Grease a muffin tin or line with paper liners.
In a large bowl, combine flour, sugar substitute, baking powder, baking soda, cinnamon, and salt.
In another bowl, mix applesauce, milk, eggs, oil, and vanilla.
Add wet ingredients to dry ingredients and stir until just combined. Fold in chopped plums. Spoon batter into muffin cups, filling two-thirds full.
Bake for 15–20 minutes or until a toothpick comes out clean. Allow to cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
