Preheat your oven to 375 degrees F and line a baking sheet with parchment paper.
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and chopped spinach, and sauté for 2–3 minutes until the spinach wilts and any excess moisture evaporates. Remove the skillet from the heat.
In a mixing bowl, combine the sautéed spinach and garlic with crumbled feta cheese, grated Parmesan cheese, plain Greek yogurt, salt, and pepper. Ensure all the ingredients are thoroughly mixed.
Take the cleaned mushrooms and fill each cap with the spinach and cheese mixture, gently pressing it down.
Arrange the stuffed mushrooms on the prepared baking sheet. If desired, you can lightly spray them with cooking spray to aid in browning.
Bake the stuffed mushrooms in the preheated oven for approximately 15–20 minutes or until they become tender, and the filling is heated through and slightly browned.
