Curry is a popular dish in several Asian countries. Try this delicious fish curry recipe served over brown rice with a side of veggies.
Preheat oven to 375 degrees.
In an oven safe sauté pan, add sesame oil and a generous amount of cooking spray over medium heat. Add onions and sauté until they turn clear but not brown, about 5 minutes.
Stir in curry paste, garlic, coconut milk and peanut butter and simmer until slightly reduced.
Season each tilapia filet with ground black pepper. Add filets to curry, coating both sides.
Place pan in the oven for 15-20 minutes or until tilapia is just cooked through.
Serve curry over 1/3 cup brown rice. Garnish with fresh cilantro if desired.
