Step-By-Step Instructions:

  1. Preheat the oven to 350 degrees F. Spray an 8x8 baking pan with cooking spray.

  2. In a large bowl combine the oats, baking powder, cinnamon, nutmeg, and brown sugar substitute. Add the walnuts and berries in and toss to combine.

  3. In a medium bowl, blend the egg substitute, milk, salt, butter, and vanilla extract. Stir to dissolve the salt.

  4. Pour the liquid ingredients into the oats mixture and mix.

  5. Pour the mixture into the prepared baking pan and spread into an even layer.

  6. Place the pan in the middle of the preheated oven and bake for 45 minutes, or until the center is firm to touch.

  7. Remove from the oven and allow to cool on a wire rack for 10–15 minutes. 

  8. Serve with 1/4 cup skim milk and a drizzle of sugar-free syrup if desired.
