Step-By-Step Instructions:

  1. In a nonstick skillet, saute blueberries in canola oil over low heat for about 10 minutes, until you can easily mash the berries.
  2. Add lime juice and cook another 5 minutes. Remove from heat and stir in vanilla extract.

Recommended

I liked the ease and taste of this recipe however I would have added less lime juice and added Splenda to sweeten it because the lime made it a bit tart. I don't even know why you have to add lime juice unless it's to preserve the sauce if you have some left over? I did made this with the oatmeal pecan pancakes. I would say don't even bother adding the lime juice tbh.

Made this with the oatmeal pecan pancakes as recommended. Followed the recipe exactly. I may as well have just juiced a lime over the pancakes with how "Limey" the sauce was. IF I were to try it again, I would definitely add way less lime juice.
