These low-sodium roasted Brussels sprouts are a simple, flavorful side dish. Roasting brings out their natural sweetness, while maple syrup and thyme add a flavor boost.
Preheat the oven to 450 degrees F.
Trim and halve the Brussels sprouts. Add them to a medium bowl.
Remove the thyme leaves from the stems and add them to the bowl.
Add the garlic, olive oil, maple syrup, salt, and pepper to the bowl and toss to combine.
Spread the sprouts out in a single layer on a baking sheet. Roast in the oven until they are fork-tender and beginning to brown, 20–25 minutes.
