In a large mixing bowl, stir together the oats, cottage cheese, milk, vanilla, and chia seeds until well combined. Fold in the diced strawberries, reserving a small handful for topping.
Spoon the mixture evenly into 4 jars or containers with lids. Cover and refrigerate overnight, or for at least 4 hours.
In the morning, stir well and top with reserved strawberries. Add a splash of milk for a looser texture if needed.
