Cómo hacer Cazuela de nachos con pollo

¿Quién dijo que no se pueden comer "nachos" si uno tiene diabetes? Prueba esta versión saludable que tiene todo el sabor de los nachos tradicionales sin toda la grasa y carbohidratos adicionales.

Instrucciones paso a paso:

  1. Precalienta el horno a 375°F (191°C). Rocía un molde para hornear de 2 1/2 cuartos con aceite en aerosol.
  2. Condimenta el pollo con pimienta negra. Rocía una sartén grande con aceite en aerosol y caliéntala a fuego medio-alto. Agrega el pollo y cocina durante 8 minutos.
  3. Agrega los tomates picados, los frijoles negros, el chile en polvo, el comino y el ajo en polvo a la sartén. Reduce el fuego a bajo y cocina a fuego lento durante 5 minutos.
  4. Vierte la mezcla de pollo en el molde para hornear. Espolvorea el queso por encima y luego cubre con los chips de tortilla triturados. Hornea 12 minutos o hasta que el queso esté derretido.

Delicious! We didn’t like the fire roasted tomatoes too much though so I started using healthy salsa instead and that gave it the more complex taste we wanted. My whole family loves it! We also serve it with light sour cream.

I really enjoyed it. I had left over chicken breast that I used. Really easy and quick since the chicken was precooked. I added sour cream. Yes I will make this again. This would be phenomenal over a salad. Thank you again for another recipe that my husband enjoys.

I made this and I liked it. BUT, I'm not sure it's the recipe in the picture. The picture shows something like parsley which isn't in the recipe. And the chicken looks like a chicken which is boiled tender and separated by forks rather than cut and sautéed. Additionally the spices look different (in color) and there are no tortilla chips in the picture. So I felt it was tasty and filling (so a success) but not really what was shown in the picture.
