Great as is or in a wrap!

I'm trying to lower my A1C, and was looking for easy meal prep salads. I omitted the red pepper and the optional cayenne, and added a little salt. It was delicious straight away, but after sitting in the fridge overnight, the flavors have developed beautifully! I put some in a low carb tortilla with baked chicken and a Tajin sour cream, and it was one of the best wraps I've had in ages.
